Mt. Defiance Apple Brandy is made from our very own hard cider. Imagine concentrating the essence of apple cider into a smooth, aromatic spirit that can be sipped or be used in a range of cocktails.

The only ingredients going into our white rum are Grade A molasses, water, and yeast. Carefully controlled fermentation followed by double distillation produces a remarkably smooth spirit.

We want to extract as much flavor as we can from the raw ingredients, so we start with blackstrap molasses for our amber rum. We add brown sugar as a fermentable, and double distill using a traditional pot still. Several months of aging on charred oak and this rum is ready to enjoy.

Our flavorful dark rum has a beautiful copper color. Sweet, smooth, and loaded with flavor.

Great ingredients are the key to a great absinthe, and we get our ingredients from the best absinthe herb grower in the United States. He just happens to be located in Virginia! Made in the traditional French Pontarlier style, we use Grand Wormwood, Hyssop, and Lemon Balm from Virginia, Aniseed from Andalusia, Spain, and Fennel Doux from Provence, France. We make our absinthe using a traditional copper alembic still in very small batches.
