Mt. Defiance Blue Agave Spirit
Mt. Defiance Blue Agave Spirit is made from 100% Blue Weber agave plants. Our agaves are grown in Mexico, on independent, often family owned fields. The agaves are processed immediately after harvest to create agave nectar that is then delivered to our distillery in Middleburg, Virginia. We ferment the nector in small batches, then twice distill in our copper pot still. The result is approachable yeast complex, perfect for sipping well chilled or mixed in your favorite cocktail.

Mt. Defiance Wild Agave Spirit
The story of Mt. Defiance “Wild” Agave Spirit begins in Mexico. Wild agaves grow in desert flatlands, arid hillsides, lush valleys and at extreme elevations. The agave hearts are harvested by hand and processed to extract the nectar that is delivered to our distillery in Middleburg, Virginia. The varied growing environments of the wild agaves create unique flavor profiles that are brought out by fermenting the 100% agave nectar in small batches, followed by double distillation in our copper pot still. Perfect for connoisseurs as well as those looking to branch out in the world of agave spirits.

Mt. Defiance Reposado Agave Spirits
Our agave is grown in Mexico, on independent often family owned agave fields. The agaves are processes immediately after harvest to create the nectar that is delivered to our distillery in Middleburg, Virginia. We ferment the nectar in small batches, distill twice in our copper pot still, and then allow the spirit to rest in oak barrels from 2-4 months to create our Reposado.

Mt. Defiance Anejo Agave Spirits
Our agave is grown in Mexico, on independent often family owned agave fields. The agaves are processes immediately after harvest to create the nectar that is delivered to our distillery in Middleburg, Virginia. We ferment the nectar in small batches, distill twice in our copper pot still, and then allow the spirit to rest in oak barrels for at least one year to create our Anejo. The nose is crisp and clear, the mouthfeel silky and rich, with notes of minerals, lemon, sugarcane rum, and hints of wood.
