Mt. Defiance Rums

Mt. Defiance Amber Rum
Our rums are made using panela from Colombia. Panela is an unrefined whole cane sugar made by the boiling and evaporation of sugarcane juice. It combines the best features of the molasses and fresh cane juice used in most rums. Double distilled in small batches using a copper pot still, our amber rum is aged for one year in small used rye whiskey barrels. Mt. Defiance Amber Rum has a sweet vanilla nose, toffee, honey and a hint of pineapple on the palette, and a finish of nutmeg, pepper, and clove.

Mt. Defiance Dark Rum
Our rums are made using panela from Colombia. Panela is an unrefined whole cane sugar made by the boiling and evaporation of sugarcane juice. It combines the best features of molasses and fresh cane juice used in most rums. We double distill our rum in small batches using a copper pot still. Our dark rum is aged for one year in small used rye whiskey barrels. A touch of caramelized sugar is added before bottling. Mt. Defiance Dark Rum has a vanilla and oak nose, caramel, chocolate, and roasted almond on the palate, with a light note of toasted marshmallow on the finish.

Mt. Defiance White Rum
Our rums are made using panela from Colombia. Panela is an unrefined whole cane sugar made by the boiling and evaporation of sugarcane juice. It combines the best features of molasses and cane juice used in most rums. We double distill our rum in small batches using a copper pot still. Following the second distillation, we cut the distillate to 80 proof and bottle our white rum. Grassy aromas and light citrus show on the nose, with sugar cane, pepper and pineapple on the palette. The finish lingers with mineral and delicate spice.
