Absinthe Supérieure

Multiple award winner.

A traditional, French-style verte absinthe created from a late 19th century French recipe. Our absinthe is distilled using whole botanicals, naturally colored, and bottled at 140 proof. We grow our own grand wormwood, roman wormwood, hyssop, and other botanicals, and import Andalusian green aniseed and French fennel doux.

Absinthe is traditionally served with water and a touch of sugar (one part absinthe to four parts water) or in cocktails. This unique experience will enchant the palate with strong notes of anise (fennel/black licorice), followed by citrus and mint.

Dos Gringos Agave Spirit

Contrasting notes of bright minerality and rich caramelized agave -generally reserved for sweet Reposados and rich nutty Anejos- allow this Blanco “Tequila” to pair with flavor profiles while remaining a superb mixer for the Classic Margarita.

We start with 100% agave syrup from Blue Weber Agave plants grown in Mexico. Fermented with Tequila yeast, we double distill the spirit using our small batch pot sill to create a unique spirit that blends flavors of both a Tequila and a Mezcal.

While not produced in Mexico, and therefore not qualifying for the naming appellations from that country, our product retains all of the silky texture and unique flavors of spirits made from the agave plant.

Amaretto Liqueur

Fourteen (14) varieties of nuts, herbs, fruits, and spices are used in crafting Mt. Defiance Amaretto Liqueur.

We start with apricot kernels and almonds to form the backbone of our liqueur.  Sweet but not cloying, true Ceylon cinnamon, cherries, and apricots contribute to a full dense flavor that lingers on the palette.

The result is a delicious after-dinner drink served on the rocks. Try baking with it, like Virginia’s Red Truck Rural Bakery does in making its famous gluten-free Almond Cake with Amaretto.

Apple Brandy

Mt. Defiance hard cider is used to make our apple brandy. Using a copper pot still, the cider is distilled twice, then aged in used whiskey barrels for over two years. After aging, the brandy is cut to 80 proof before bottling.

Apple notes balanced with cocoa are apparent on the nose. Barrel aging contributes oak, cinnamon and vanilla flavors to the pallet. Chocolate flavors return through a medium length finish.

Old Volstead's Straight Bourbon Whiskey

Corn, wheat and barley are the grains that go into our smooth Virginia Bourbon.

Our mash bill includes 70% corn, 25% white wheat, and 5% malted barley. The wheat gives our bourbon that sweet, smooth flavor that makes for a great sipper.

Aged for two years in new charred American white oak barrels, each batch is bottled from a single barrel.  Old Volstead’s Straight Bourbon Whiskey features beautiful caramel and vanilla notes on the palette.

Cassis Liqueur

Bitter, sweet, fruity … our cassis is truly something special. This delectable liqueur is an exceptional addition to desserts, champagne, and specialty cocktails.

Originating in France, cassis is a black currant liqueur. Black currant cultivation in the United States was banned at the federal level until 1966. New York State  legalized cultivation in 2003; however, many other states like Virginia still have a ban in effect.

Our distiller travels to New York’s Hudson Valley just after harvest to collect this uncommon fruit. The black currants are then steeped in high proof alcohol for three months, imparting the berry’s bitter and fruity character, then sweetened with beet sugar.

Pommeau

Considered a fortified wine/cider, our Pommeau is a delicious blend of cider and Mt. Defiance apple brandy that has been aged together for one year in a used bourbon barrel.  Subtly sweet, with a great apple  aroma and a warm brandy finish. Hints of vanilla and caramel make this a delicious sipper.  Perfect  served cold as an aperitif, or delicious at the end of a meal.

White Rum

Our rums are made using panela from Columbia. Panela is an unrefined whole cane sugar made by the boiling and evaporation of sugarcane juice. It combines the best features of molasses and cane juice used in most rums.

We double distill our rum in small batches using a copper pot still. Following the second distillation, we cut the distillate to 80 proof and bottle our white rum.

Grassy aromas and light citrus shows on the nose, with sugar cane, pepper and pineapple on the palette. The finish lingers with mineral and delicate spice.

Amber Rum

Our rums are made using panela from Columbia. Panela is an unrefined whole cane sugar made by the boiling and evaporation of sugarcane juice. It combines the best features of molasses and fresh cane juice used in most rums.

We double distill our rum in small batches using a copper pot still. Our amber rum is aged for one year in small used rye whiskey barrels.

Mt. Defiance Amber Rum has a sweet vanilla nose, toffee, honey and a hint of pineapple on the palette, and a finish of nutmeg, pepper, and clove.

Dark Rum

Our rums are made using panela from Columbia. Panela is an unrefined whole cane sugar made by the boiling and evaporation of sugarcane juice. It combines the best features of molasses and fresh cane juice used in most rums.

We double distill our rum in small batches using a copper pot still. Our dark rum is aged for one year in small used rye whiskey barrels. A touch of caramelized sugar is added before bottling.

Mt. Defiance Dark Rum has a vanilla and oak nose, caramel, chocolate and roasted almond on the palette, with a light note of toasted marshmallow on the finish.

Sweet Vermouth

Sweet Vermouth is a sweetened fortified wine that is aromatized with botanicals.

We use Mt. Defiance Apple Brandy to extract flavors from herbs we grow ourselves and spices from around the world. We blend the flavored brandy with barrel-aged brandy, Vidal Blanc wine, local honey, and caramel syrup.

The result is delicious chilled, on the rocks, or in classic cocktails like the Manhattan.
